I noticed the .3 release has the standard screen resolutions listed. Are there any plans to include the new 1.6 aspect ratios for the widescreen pc monitors that are becoming more the norm?

You can probably get what you're looking for by manually editing the config.xml file in the FreeOrion main directory. Just change the fields:

<app-height>768</app-height>
<app-width>1024</app-width>

to whatever you want, and I suspect it'll work.

AFAIK there's nothing in the code that prevents unusual resolutions. I usually run in something like 1000 x 730 so that the taskbar doesn't cover / get covered by any part of the FO window, and to make it easier to run two clients on the same machine to test multiplayer.

I don't do this in fullscreen though... and when I do run in fullscreen, it's always been on a 4:3 monitor, so I don't know if that'll make any difference. Windowed shouldn't be a problem, though.

I use a widescreen resolution of 1280x800 on my laptop with FreeOrion, and it works fine. The only thing is that the splash screen is a little stretched.

So if you edit to whatever resolution you like as Geoff informed, you should be fine.
